DESCRIPCIÓN- popular en los estados del sur de la India, el arroz ocioso es arroz indio sancochado. Idly Rice es de color blanco y se ve esponjoso. El arroz hervido proporciona un aroma único y un sabor increíble. Se usa específicamente para hacer idli (pastel de arroz salado hecho tradicionalmente cociendo al vapor la masa fermentada de arroz y dal) y dosa (un panqueque delgado o crepe originario del sur de la India hecho cociendo al vapor la masa fermentada de arroz y dal).
Como sugiere su nombre, el arroz Idli se usa para preparar la masa para los idlis y dosas del sur de la India. Los idlis son pasteles de arroz y lentejas al vapor suaves y esponjosos que forman parte de la dieta básica en estados como Tamil Nadu, Kerala, etc. Se pueden servir tal cual con sambhar y chutneys. O frito en aceite con condimentos y polvo de molagappodi (chutney en polvo). Idlis también se puede mezclar con cuajada, sazonar con hojas de curry, mostaza y chiles y servir frío.
PREPARACIÓN Y USO –
Receta de masa Idli:
1. Remoje 3 tazas de arroz Idli y 1 taza de Urid dal por separado, durante la noche. También se puede agregar una cucharada de semillas de methi al arroz empapado.
2. Moler el arroz y el dal por la mañana y mezclar bien.
3. Agregue sal y deje fermentar la masa durante 8-10 horas en un lugar cálido.
4. Úselo inmediatamente o guárdelo en el refrigerador. Algunas personas usan diferentes proporciones de arroz y lentejas. En lugar de 3:1, puede ser 4:1.
